Produced with the blending of traditional varieties: Xarel·lo, Macabeu and Parellada, each variety is harvested and vinified separately. The first fermentations are carried out in stainless steel tanks at a temperature below 15ºC to preserve all the aromas. When the single-varietal wines have exposed their characteristics and aromas, the proportions that each of the varieties will present in the blend are determined. The second fermentation in the bottle takes place in our underground cellar, where it is subsequently aged for more than 9 months, before disgorging. In the cold disgorging process, the sugar content is adjusted to 7g/l
50% Xarel-lo, 25% Macabeu, 25% Parellada • All estate-fruit • After primary fermentation, a long, slow secondary fermentation at low temperature • Aged 12 months sur lie

Delight in the delicate aromas of red berries and roses, complemented by a smooth, creamy finish.

Produced with grapes harvested at the optimal moment of ripeness and selected at the entrance to the winery. The gentle pressing process is used to carry out a short maceration of the must with the grape skin and extract its aromas and color. The first fermentation takes place in a stainless-steel tank at a temperature below 15ºC to preserve all its aromas. The second fermentation in the bottle takes place in our underground cellar, where it is subsequently aged for more than 9 months, before disgorging. In the cold disgorging process, the sugar content is adjusted to 7g/l
• 100% Pinot Noir • All estate fruit • Macerated on the skins for 8 hours • Aged 12 months sur lie

Conquilla Brut Nature delivers the fresh, linear pizzazz of zero added sugar as well as the rich, toasty depth that can only come from a long, slow secondary fermentation in bottle over twelve months before disgorgement in a (naturally) cool subterranean section of decommissioned AVE train tunnel!
